On 16th May 2025, University College Cork will host a very special one-day Symposium in honour of the late Professor Patrick (PF) Fox, who passed away in July 2024. Professor Fox’s scientific contributions to dairy science and technology, especially in dairy chemistry, and cheese ripening, are known the world over. Today, his former students and collaborators carry on his legacy in their research at prestigious universities and institutes and in the dairy industry around the world
